so i was laying poolside with some girlfriends this weekend flipping through some magazines and stumbled across an ad for sweet potato tater tots… that’s right. tots. made of sweet potatoes. not sure why it took someone so long to come out with these amazing puffs of perfection, or why it took me so long to find them, but all i have to say is YUM!

while the sweet potato is one of my personal favorite foods (because they taste so darn good!)…they also happen to be very healthy for you. did you know that sweet potatoes…

  • contain 438% of your daily value of vitamin A (which fights infections…)
  • are a great source of beta-carotene (helps to protect the skin…)
  • have 28% more potassium than a banana?!?! (potassium helps us to absorb fluids to replace what’s lost through sweating…)

maybe the next race i’m in will offer baked sweet potato fries at the finish line instead of the humble little fruit we normally see 😉
